Coddled eggs

Chives are up.  I had some leftover salmon and wanted coddled eggs - and I adore using my ramekins....

4 eggs

2 ounces smoked salmon

4Tbl milk

Lakin's Gorges Morgan,  1Tbl grated per ramekin

Bread to cover bottom of ramekin

Chives

Salt and pepper

Butter

1.  Heat oven to 375°F and butter 4 ramekins

2.  Use a glass to cut bread to fit bottom of ramekin and place round in ramekin. Top with grated Morgan. 

3.  Divide the salmon in fourths and put into each ramekin

4.  Crack one egg into each dish.  Top with 1Tbl milk

5.  Season with salt and pepper

6.  Place ramekins in a deep dish and fill dish halfway with water.   Bake 12-15 minutes until whites are set and yolks are soft

7.  Serve topped with chopped fresh chives
