Savory Baked Prix de Diane
1 Lakin’s Gorges Cheese Prix de Diane
1 clove of garlic, thinly sliced
¼ cup sauteed leeks
¼ cup sautéed chopped chard
1 tablespoon of dry white wine
1 teaspoon of fresh tarragon
Load of crusty bread
Pre-heat oven to 400 F.
Unwrap the Prix and put it in an oven proof baking dish.
Cut small slits into the top of cheese, and push a slice of garlic into each one.
Pour the wine into the slits, and cover the cheese with the sautéed leeks and chard. Top with tarragon.
Bake the cheese in the oven for 20 minutes, or until melted and bubbling. Serve with good bread and dip right in.
And don’t burn your mouth!

Prix de Diane is a 1/2 pound, bloomy rind cheese that is creamy and decadent.

Recipe note: You can substitute any bloomy rind cheese in this- those are the soft ripened cheeses with a rind on the outside and a creamy paste in the center, like Brie.
You also can cook a portion of a wheel, just use a dish that is close in size to the cheese so that as it melts it’s still easy to swab up with your bread.
