Medallion is a soft cheese that is creamy with hints of lemon. I was inspired by the flavors of St. Marcellin from France when I created it.

It's aged for only 2 weeks, so it starts off a little firmer and more lactic. Eat it then, or let it ripen longer until it is runny. At only 3 ounces, it's easy to enjoy solo.

This is also a fun cheese to Brulée.!
